Raw Caramel Nut Frosted Fudge

One of my favorite holiday treats is freezer fudge. My grandmother’s freezer was always stocked with tins and tins of homemade fudge and assorted goodies. I blame her for my raging sweet tooth. I can’t tell you how many times in my youth (and adulthood) that I snuck out to the deep freeze to pop a piece of rich chocolatey goodness in my mouth and let it melt slowly on my tongue.

I’ve created this raw fudge recipe in honor of my grandmother this holiday season. It’s vegan, grain-free, refined sugar-free, and very easy to make. All you need is a food processor and a loaf pan.

Make the Fudge Layer and spread it into a parchment paper-lined loaf pan.

Make the Caramel Nut Frosting, spread it on top of the fudge layer, and let it set in the freezer.

You can cut the fudge into 8 generous pieces and serve it as Raw Caramel Frosted Fudge Cake.

Or cut each piece of cake into quarters to make 32 bite-sized pieces of freezer fudge. (You know that’s what I’m doing this holiday season.)

Raw Caramel Nut Frosted Fudge

Fudge Ingredients:

  • 1/4 cup coconut flour
  • 1/2 cup almond flour
  • 1 cup cacao powder
  • 2 avocados
  • 1/2 cup maple syrup
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1/2 teaspoon sea salt

Caramel Nut Frosting Ingredients:

  • 1 cup dates, soaked in water for 1 hour
  • 1/2 cup cashews, soaked in water for 1 hour
  • 1 teaspoon vanilla
  • 1/4 teaspoon sea salt
  • 1/4 cup nut milk (I use almond milk.)
  • 1/2 cup finely chopped walnuts


  1. Soak dates and cashews in water and set aside while you prepare the fudge layer.
  2. Combine all fudge ingredients in a food processor and process until creamy.
  3. Spread fudge in a parchment paper-lined loaf pan and place in the freezer to set.
  4. Drain dates and cashews and place them in the food processor with vanilla and sea salt. Process for 2-3 minutes, stopping to scrape down the sides several times. Slowly drizzle in up to 1/4 cup of nut milk and process until smooth.
  5. Transfer frosting to a medium-sized bowl and fold in chopped walnuts.
  6. Spread frosting on top of the fudge layer and freeze for 30 minutes.
  7. Cut into 8 cake-sized pieces or 32 fudge bites. Serve immediately or store in the freezer. Thaw on the counter 30 minutes before serving, or experience the joy of a mouthful of freezer fudge throughout the season!
