Easy Vegan Pumpkin Chocolate Chip Ice Cream

It’s October! That means I’m already dreaming of delicious pumpkin treats. I can’t wait for the pumpkin breads, muffins, cookies, pies, and pancakes that will soon be coming my way! But before we let go of Summer completely, let me offer a healthy pumpkin-inspired transitional treat that will help you move from short sleeve days to sweater and corduroy days.

Pumpkin Chocolate Chip Ice Cream! My version is dairy-free, gluten-free, vegan, far healthier than traditional ice cream, and it doesn’t require an ice cream maker.

Simply mix the ingredients together in a food processor and freeze it in a bread loaf pan lined with waxed paper.

Just before you are ready to serve, leave the pan on the counter to soften slightly. Then scoop it up!

It may be a bit icy at first. Running your ice cream scoop under hot water will help get the scooping started.

Enjoy this ice cream between two of your favorite gluten-free cookies, on a cone, or my favorite way…all by itself.

Easy Vegan Pumpkin Chocolate Chip Ice Cream

Serves 4

Ingredients:

  • 4 bananas, broken into small pieces and frozen
  • 1 cup canned organic pumpkin pie mix
  • 1 teaspoon vanilla
  • 1 teaspoon pumpkin pie spice
  • 1 cup dairy-free chocolate chips

Instructions:

  1. Place frozen banana pieces, pumpkin pie mix, vanilla, and pumpkin pie spice in the food processor. Process until creamy.
  2. Add chocolate chips and mix them in with a spoon or spatula.
  3. Line a bread pan with waxed paper and pour the ice cream mixture into the pan.
  4. Freeze for at least 4 hours or overnight.
  5. Remove the pan from the freezer about 20 minutes before serving to soften.
  6. Scoop and serve!
