Chocolate Peppermint Cookie Dough Bites

The holidays are coming! The holidays are coming! Thanksgiving is in just two weeks and I couldn’t be more excited. I really do love Thanksgiving. It’s one of my favorite holidays. The baking, the eating, the time with family…then more eating. Being in the kitchen, cooking with my mom, that’s my favorite part.

With all of the baking I’ll be doing between Thanksgiving and Christmas, sometimes I just want to make something that is quick and easy. A recipe that doesn’t require any baking. I first created these chocolate chip cookie dough bites and then shared a recipe for an oatmeal raisin version (which might be my fave). These dark chocolate cherry are pretty fantastic too. There are so many varieties of these little treats and they couldn’t be easier to make!

Now I’ve gone and made chocolate peppermint cookie dough bites! Chocolate and peppermint, is there a better combination? You will love these little bites of yumminess. They are gluten, dairy, and egg free. Your kids can help you make them too. Getting in the kitchen and getting creative with your family and friends is a precious thing. Creating those memories, that’s what the holidays are all about!

Chocolate Peppermint Cookie Dough Bites

makes 16


  • 1 1/4 cups certified gluten free oats
  • 1/2 cup raw cashews
  • 1/4 cup good quality cocoa powder
  • 1/4 cup pure maple syrup
  • 2 tablespoons coconut oil, melted
  • 1/2 teaspoon pure vanilla extract
  • 1/2 teaspoon pure peppermint extract
  • 1/2 cup mini dairy free chocolate chips


  1. Place oats and cashews into food processor or high-powered blender (I used my Blendtec). Blend on high until finely ground. Pour into mixing bowl. Stir in cocoa powder. In small bowl, mix together maple syrup, melted coconut oil, peppermint extract and vanilla extract. Add to oat mixture. Stir until combined. Mix in the chocolate chips. Scoop and roll cookie dough into 16 balls. Store in air-tight container in refrigerator.
