Savory Pumpkin Almond Twists

A perfect summer meal to me is a giant salad with garden-fresh produce and homemade dressing. But in the cooler months, nothing could be further from the truth! While I’ll happily eat salad year round, a bowl of soup or stew is the epitome of comfort on chilly days. What’s even better than soup? The stuff you dunk in it, of course.

Soup served on its own always seems naked to me. Every good soup deserves a good “dipper,” like cornbread muffins or crunchy crackers.

My love for dippers sent me to the kitchen a few weeks ago to create these Savory Pumpkin Almond Twists, a delightful twist on bread sticks that pair perfectly with a warm pot of broth and veggies.

We all have our “desert island” foods—the foods we can’t live without—and one of mine happens to be almonds. That’s why I love working with almond flour every chance I get. Not only is it a low-glycemic and grain-free choice, but it also lends delicious buttery flavor to baked goods that would otherwise be lacking.

These twists look super fancy, but they’re actually very easy to form. The dough is forgiving. You can easily pinch cracks or breaks back together as you form the twists. I am not by any means a perfect baker, which is why I like working with doughs that don’t mind my fumbling fingers.

Who says you can’t have chocolate for breakfast?

For many of us, myself included, breakfast is usually whipped up in less than 5 minutes, like this delicious recipe. For me, it tends to be random ingredients, fruit and vegetables alike {really it’s whatever I have in my fridge or freezer at the time}, thrown into a blender with a little almond milk, and that’s my meal.

It’s quick, healthy and always delicious. 

But what about those moments when you actually have time to sit down and enjoy your breakfast? When you want more than your same old smoothie or green juice. When you want something slightly sweet, but still packed with vegetables. When you don’t mind really want to spending a few extra minutes in the kitchen, mixing, creaming and baking to your heart’s content.

Breakfast is my favorite meal of the day and I’m the type of person who goes crazy for baked goods. And I want something that is melt-in-my-mouth good.

Traveling with special diets is a challenge.

Truth is, I’ve never been a good traveler.  Basically, packing and deciding what to take with me has always driven me crazy been difficult, but since my whole family has gone on special diets, it’s become a pretty daunting task.

I’m assuming that I am not the only one on a special diet who finds it hard or near impossible to travel?

  • My oldest has five life-threatening food allergies, and we are all eating low-to-no-sugar, and are trying to limit our grains to some extent.
  • And we’re trying to eat only whole foods.
  • Yes – it’s crazy and that’s why we really don’t travel that much.
  • We do, however, travel several times a year as the kids and I go in tow with hubby to a work commitment, and we are thinking about another trip later this summer.I’m realizing that even though the preparation is really hard on me, the memory-making is important.
