5 Healthy Holiday Cookie Recipes
If you’re anything like me, the holiday season is one very merry baking spree. I love giving edible gifts to friends and family, so my kitchen transforms into a bakery for much of November and December as I bake batch after batch of cookies, quick breads, muffins, and more.
With the Christmas music cranked up and the kitchen warm from the heat of the oven, I set to work in the most joyful of spirits. I strive to not only give gifts of good taste, but also gifts of good health. Instead of using refined flours and sugar in my baked goods, I put the emphasis on whole gluten-free grains, natural sweeteners, and lots of super foods like fruits, nuts, and seeds.
By baking with super healthy ingredients, together we can take back the whisk and start a cookie revolution! I hope you’ll join me this holiday. In celebration of cookie baking season, I thought I’d share with you five of my favorite healthy cookie recipes. Not only are they festive and flavorful, but they’re so nutritious you can feel good about snagging a few from the cookie tin before giving them away to your loved ones.
These Soft Molasses Drop Cookies are surprisingly light on the tongue, not the least bit dense or chalky, and sing with hearty molasses flavor. They freeze well, as every good drop cookie should, and—for a cookie—they pack some pretty stellar nutrition in every bite.
Cinnamon-scented and simple to make, these vegan Cinnamon Oat Snowdrops are just the ticket if you’re in a pinch for a sweet treat. You don’t even have to fire up the oven to make them. Just process, roll, refrigerate!
No one will ever know that there are shredded beets in these indulgent Fudgy Brownie Bites. They’re also grain-free and very freezer friendly.
You can’t get more festive than these grain-free Pistachio Thumbprint Cookies! With their hint of red and green, chewy texture, and mouthwatering flavor, even the reindeer will be begging for more of these healthy treats.
Last but not least, these vegan and grain-free Mini Pumpkin Power Cookies are just irresistible. They pack so many of my favorite autumnal ingredients into one healthy and buttery cookie that pairs perfectly with homemade almond milk.
